Charlie Summa's hot dog truck in Brentwood,NY,was the favorite spot to stop, or make a special trip, to get a hot dog with red onion sauce. Charlie's sauce recipe was a family secret of the Summa's and, even though Charlie's has since closed their business, it remains a secret today. For years Buz has been experimenting and making the sauce at home. When we decided to go into business for ourselves, it was a hot dog truck that served red onion sauce that we decided on. Since we needed a facility to make the onion sauce fresh, our plans evolved to include putting in our own commissary, just for the sauce!
